Ingredients
  

For the Kofta
  • 1 lb Ground Chicken Substitute with ground turkey for a lighter option.

  • 3 cloves Garlic Minced; fresh is preferred.
  • 1/4 cup Fresh Parsley Chopped; can substitute with cilantro.
  • 1 tsp Ground Cumin Consider using coriander as a partial substitute.
  • 1 tsp Ground Coriander Can be omitted if needed.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Ground Black Pepper Omit for less heat.
For the Garlic Yogurt Sauce
  • 1 cup Plain Yogurt Greek yogurt adds creaminess; dairy-free yogurt is a substitute.
  • 2 tbsp Freshly Squeezed Lemon Juice Fresh is always better than bottled.
  • 1 tbsp Olive Oil Avocado oil can be used for high-heat cooking.

Method
 

Kofta Preparation
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, and pepper. Mix thoroughly.
  2. Shape the mixture into small oval-shaped koftas.
  3. Preheat your grill to medium-high heat (375°F). Brush the grill grates with olive oil.
  4. Grill the koftas for about 10-12 minutes, turning occasionally, until golden brown and cooked through.
Sauce Preparation
  1. In a bowl, combine the plain yogurt, freshly squeezed lemon juice, and a pinch of salt. Stir until smooth.
  2. Adjust seasoning to taste, adding more lemon juice if desired.
Serving
  1. Serve the grilled koftas on a platter with the garlic yogurt sauce on the side.
  2. Optionally serve with warm pita bread or a fresh salad.
