  • 2 tablespoons Soy Sauce use tamari for gluten-free
  • 1 teaspoon Dried Thyme fresh thyme can be substituted with three times the amount
  • 1 teaspoon Paprika can be replaced with cayenne for heat or omitted

For the Finish
  • 1/4 cup Chopped Parsley can try substituting with chives or cilantro

Method
 

Step-by-Step Instructions
  1. Rinse the rice under cold water until the water runs clear and let drain.
  2. Chop the onion, mince the garlic, and slice the mushrooms.
  3. Heat olive oil in a skillet over medium heat and sauté onion until translucent.
  4. Add minced garlic and cook for an additional minute, then add sliced mushrooms and cook until golden.
  5. Sprinkle in thyme, paprika, and season with salt and pepper; mix well.
  6. Add rinsed rice and toast in the skillet for 1-2 minutes.
  7. Pour in vegetable broth and soy sauce; bring to a boil.
  8. Reduce heat to low, cover, and simmer for 15-18 minutes.
  9. Turn off heat and let sit covered for an additional 5 minutes.
  10. Fluff the rice gently with a fork and garnish with parsley before serving.
