  • 30 g Parmesan Cheese, grated Pecorino Romano can be a substitute.
  • 1 large Egg Chia or flax egg can substitute for a vegan option.
  • 2 tablespoons Fresh Parsley, chopped Basil can be used for a different herb flavor.
  • 1 teaspoon Italian Seasoning Oregano and thyme can be used in combination.

Step‑by‑Step Instructions for Parmesan Chicken Meatloaf
  1. Preheat your oven to 200°C (400°F) and prepare a baking sheet lined with foil and lightly spray with cooking spray.
  2. In a medium skillet, warm up olive oil over medium heat and sauté the onion and garlic for about 5 minutes until softened.
  3. In a large mixing bowl, combine ground chicken, cooled onion and garlic mixture, seasoned breadcrumbs, milk, Parmesan cheese, egg, parsley, Italian seasoning, and salt. Mix gently.
  4. Shape two-thirds of the meat mixture into a rectangle on the prepared baking sheet and lay out mozzarella slices in the center.
  5. Cover the cheese with the remaining meat mixture, sealing well.
  6. Spread marinara sauce evenly over the top and bake for 45 minutes until cooked through.
  7. Prepare the topping by mixing panko breadcrumbs, Parmesan cheese, melted butter, and chopped parsley.
  8. After 45 minutes, remove meatloaf, sprinkle with shredded mozzarella and breadcrumb mixture, and bake for an additional 15-20 minutes until topping is golden.
  9. Let the meatloaf rest for 10 minutes before slicing and serving.
