Ingredients

For the Yogurt Base
  • 240 g Greek yogurt Substitution: Can use plant-based Greek-style yogurt for a vegan version.
  • 60 g powdered peanut butter Substitution: Use regular peanut butter for a richer taste but higher calories.
  • 120 g creamy peanut butter Substitution: Choose natural for a healthier option; all peanut butter can be used instead.
  • 60 ml maple syrup Substitution: Honey can be used for a different flavor.
For the Chocolate Coating
  • 90 g dark chocolate chips Substitution: Dairy-free chocolate chips for a vegan version.
  • 15 ml coconut oil Can be omitted if desired.

Equipment

  • Medium mixing bowl
  • Silicone Molds
  • microwave-safe bowl

Method

Step-by-Step Instructions
  1. In a medium mixing bowl, combine 240 g of Greek yogurt, 60 g of powdered peanut butter, 120 g of creamy peanut butter, and 60 ml of maple syrup. Use a spatula or whisk to blend the ingredients until smooth and creamy, ensuring there are no lumps.
  2. Spoon the mixture into silicone molds or an ice cube tray, using about a tablespoon per mold. Gently press down to pack the mixture and remove any air pockets.
  3. Place the filled molds in the freezer and let them freeze for about 1 hour, or until the bites are firm to the touch.
  4. In a microwave-safe bowl, combine 90 g of dark chocolate chips and 15 ml of coconut oil. Microwave on medium power for 30 seconds, then stir. Continue to microwave in 15-second intervals, watching closely and stirring until the mixture is smooth and glossy.
  5. Once the yogurt bites are frozen, carefully remove them from the molds. Quickly dip each bite into the melted chocolate, ensuring they are fully coated.
  6. After coating all the bites, return them to the freezer for about 30 minutes. Check that the chocolate is firmly set before serving.
