  1. Wash the peaches, slice them in half, remove the pit, and chop the flesh into ¼ inch cubes.
  2. Combine the plum tomato, jalapeño, and purple onion in a food chopper and pulse until finely chopped.
  3. In a mixing bowl, gently fold the chopped vegetable mixture into the diced peaches.
  4. Squeeze lime juice over the mixture and season with salt and pepper to taste.
