- Prepare Kabsa Spice Mix by combining all spices in a bowl. Set aside.
- In a pan, heat oil over medium heat. Sauté onions, ginger, garlic, and green chili for 2-3 minutes.
- Add dried bay leaves, cloves, cardamom pods, and a cinnamon stick. Fry for about 1 minute.
- Stir in tomato purée, diced tomatoes, and spice mix. Cook for 1 minute.
- Add chicken pieces, skin-side down. Cook for about 30 minutes until browned.
- Add rinsed basmati rice and raisins. Pour in water and bring to a boil.
- Reduce heat to low, cover, and simmer for 10-15 minutes.
- Preheat grill. Grill chicken pieces for 10-15 minutes until fully cooked.
- Serve the rice topped with grilled chicken, garnished with raisins if desired.
