  • 2 medium Carrots slice thin
  • 2 pcs Chicken Stock Cubes optional
  • 1 whole Whole Chicken skin-on preferred
  • 2 cups Basmati Rice rinse thoroughly
  • 0.5 cup Raisins optional
  • 4 cups Water
  • 1 tbsp Salt adjust to taste

Method
 

Step-by-Step Instructions
  1. Prepare Kabsa Spice Mix by combining all spices in a bowl. Set aside.
  2. In a pan, heat oil over medium heat. Sauté onions, ginger, garlic, and green chili for 2-3 minutes.
  3. Add dried bay leaves, cloves, cardamom pods, and a cinnamon stick. Fry for about 1 minute.
  4. Stir in tomato purée, diced tomatoes, and spice mix. Cook for 1 minute.
  5. Add chicken pieces, skin-side down. Cook for about 30 minutes until browned.
  6. Add rinsed basmati rice and raisins. Pour in water and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 10-15 minutes.
  8. Preheat grill. Grill chicken pieces for 10-15 minutes until fully cooked.
  9. Serve the rice topped with grilled chicken, garnished with raisins if desired.
