Preparation Steps
- In a blender, combine 1 cup of coconut milk and 1 cup of frozen blueberries. Blend on high until smooth.
- Pour half of the blueberry puree into each of two pint-sized mason jars. Add 1 cup of rolled oats and 2 tablespoons of chia seeds to each jar.
- Drizzle in maple syrup or agave syrup if desired. Stir well to combine, ensuring the oats are evenly coated with the blueberry puree.
- Cover mason jars with lids and refrigerate for at least three hours, preferably overnight.
- Before serving, stir well. If too thick, add a splash of coconut milk. Top with extra blueberries and shredded coconut.
