  • 1 cup rolled oats Ensure they are rolled
  • 1 cup frozen blueberries Can substitute with fresh blueberries
  • 2 tablespoons chia seeds Can omit if desired
  • 1 tablespoon maple syrup or agave syrup Optional, adjust to taste
  • 1 teaspoon vanilla extract Optional, omit if avoiding added flavors
For Topping (optional)
  • 2 tablespoons shredded coconut For added crunch
  • 1 cup extra blueberries For garnish

Method
 

Preparation Steps
  1. In a blender, combine 1 cup of coconut milk and 1 cup of frozen blueberries. Blend on high until smooth.
  2. Pour half of the blueberry puree into each of two pint-sized mason jars. Add 1 cup of rolled oats and 2 tablespoons of chia seeds to each jar.
  3. Drizzle in maple syrup or agave syrup if desired. Stir well to combine, ensuring the oats are evenly coated with the blueberry puree.
  4. Cover mason jars with lids and refrigerate for at least three hours, preferably overnight.
  5. Before serving, stir well. If too thick, add a splash of coconut milk. Top with extra blueberries and shredded coconut.
