Step-by-Step Instructions for Blackened Shrimp Stroganoff
  1. In a medium bowl, combine fresh shrimp with olive oil and Cajun seasoning. Toss well and set aside for 10-15 minutes.
  2. Bring a large pot of salted water to a rolling boil. Add fettuccini and cook for 8-10 minutes until al dente. Drain and set aside.
  3. In a large frying pan, melt butter over medium heat. Add mushrooms and shallots; sauté for 5-7 minutes until golden brown. Remove and set aside.
  4. Increase heat to medium-high and add marinated shrimp. Cook for 2-3 minutes until pink and slightly charred. Remove and set aside.
  5. In the same pan, pour in chicken broth and reduce to about ¼ cup. Mix sour cream with cornstarch; stir into reduced broth until thickened, about 1 minute.
  6. Return shrimp, sautéed vegetables, roasted red peppers, and capers to the pan. Stir together and heat through for 2-3 minutes.
