  1. Prepare the zucchini by washing and grating it. Squeeze out the excess moisture using a kitchen towel and set aside.
  2. In a large bowl, mix together the flour, eggs, milk, lemon zest, parsley, salt, and pepper until smooth.
  3. Fold the squeezed zucchini into the batter until evenly mixed. Add in the Parmesan cheese if using.
  4. Heat olive oil in a skillet over medium heat until shimmering. Pour half the batter into the skillet and cook until golden brown.
  5. Flip and cook the other side until golden. Repeat with remaining batter.
  6. Transfer the skillet to a preheated oven at 375°F and bake for 20-25 minutes.
  7. Let cool for a few minutes, slice, and serve with optional toppings.
