Step-by-Step Instructions
  1. Wash and peel apples, core and chop them. Finely dice the onion and mince the garlic.
  2. Heat olive oil in a pot, add onions and garlic, and sauté for about 5 minutes until translucent.
  3. Stir in chopped apples and pour in vegetable broth. Bring to a boil, then simmer for 15–20 minutes.
  4. Blend the mixture until smooth using an immersion blender, about 2 minutes.
  5. Add shredded cheddar cheese, stirring until melted. Season with salt, pepper, and thyme.
  6. Pour in heavy cream and stir to incorporate, heating for another 5 minutes without boiling.
  7. Ladle into bowls and garnish with thyme or extra cheddar before serving.
