  • 1 pound Ground Turkey
  • 1/2 cup Bread Crumbs whole grain recommended
  • 1 large Egg can substitute with flaxseed mixture
  • 2 teaspoons Italian Seasoning adjust to taste
  • 1/4 cup Parmesan Cheese or nutritional yeast for dairy-free
For the Subs
  • 4 pieces Sub Rolls preferably whole wheat
  • 2 cups Marinara Sauce homemade is ideal
  • 1 cup Mozzarella Cheese or dairy-free cheese
  • 1 cup Fresh Basil or Spinach based on availability
Optional Toppings
  • 1 medium Sliced Avocado
  • 1/4 cup Sliced Olives black or green
  • 1 teaspoon Crushed Red Pepper Flakes use sparingly

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). In a mixing bowl, combine ground turkey, breadcrumbs, egg, Italian seasoning, and Parmesan. Form into meatballs and place on a baking sheet.
  2. Bake for 20-25 minutes until golden brown and cooked through with an internal temperature of 165°F (74°C).
  3. In a saucepan, heat marinara sauce over medium heat for 5-10 minutes until warm.
  4. Slice sub rolls in half and place on a baking sheet. Optionally sprinkle cheese, then toast with meatballs for the last 5 minutes.
  5. Assemble subs with meatballs, marinara sauce, and mozzarella cheese. Top with basil or spinach and optional toppings.
