Method

Step-by-Step Instructions
  1. In a mixing bowl, whisk together ¼ cup of olive oil, 2 tablespoons of lemon juice, 3 cloves of minced garlic, 2 tablespoons of chopped fresh parsley, 1 teaspoon of dried oregano, 1 teaspoon of paprika, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Mix until well combined.
  2. Add 1 pound of peeled and deveined jumbo shrimp to the marinade, tossing gently to ensure each shrimp is fully coated. Allow to marinate for 10-15 minutes at room temperature.
  3. Preheat your grill or grill pan to medium-high heat, approximately 400°F (204°C).
  4. Thread the marinated shrimp onto skewers, about 5-6 shrimp per skewer.
  5. Place the skewers on the preheated grill. Grill the shrimp for 2-3 minutes per side, flipping them when they turn opaque and pink.
  6. Remove the shrimp from the grill and arrange them on a serving platter. Garnish with lemon wedges and the remaining fresh parsley.
