Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 pound of ground beef (or plant-based crumbles), cooking until browned, about 6 to 8 minutes.
  2. Once the meat is browned, stir in 2 tablespoons of taco seasoning and 1/2 cup of water. Allow the mixture to simmer for about 3 to 5 minutes.
  3. Prepare your cooked rice. If it's leftover, microwave it for about 1-2 minutes until heated through; otherwise, cook fresh rice according to package instructions.
  4. Grab your bowls and layer with warm rice at the bottom, then add the seasoned meat, followed by 1 cup of shredded cheddar cheese.
  5. Top your bowl with shredded lettuce, halved cherry tomatoes, and 1 cup of drained black beans. Optionally, add corn for sweetness.
  6. Before serving, add dollops of sour cream and your favorite salsa over the top, then sprinkle crushed Doritos liberally.
