- Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a skillet, add the sweet maple sausage and sauté for about 5–7 minutes until browned.
- In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, nutmeg, salt, and pepper.
- Layer half of the cubed bread in the baking dish, pour half of the egg mixture, then half of the sausage, and sprinkle with cheese. Repeat the layers.
- Allow the casserole to rest for 15-20 minutes at room temperature.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15-20 minutes until golden brown.
- Let the casserole cool for 5 minutes before serving. Drizzle with extra maple syrup and garnish with blueberries or pecans.
