  • 1 cup Radishes Thinly sliced
  • 4 cups Arugula Fresh
  • 1 cup Feta Cheese Crumble over the top
For the Dressing
  • 1 clove Garlic Minced
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Vinegar Your choice
  • 3 tablespoons Olive Oil
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Black Pepper Freshly ground

Method
 

Making the Dressing
  1. Combine minced garlic, lemon juice, vinegar, Dijon mustard, and kosher salt in a jar. Secure the lid and shake for 30 seconds.
  2. Gradually add olive oil while shaking to emulsify the dressing.
Preparing the Salad
  1. Wash and trim the sugar snap peas. Slice radishes thinly.
  2. In a mixing bowl, combine sugar snap peas, radishes, and arugula. Crumble feta over the top.
Tossing the Salad
  1. Remove garlic from dressing and drizzle two-thirds over the salad. Toss gently to coat.
Serving
  1. Taste and adjust seasoning with more salt and pepper if needed. Serve immediately.
