Method
 

Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the sushi rice under cold water until clear. Combine with water, boil, then simmer for 18-20 minutes. Let rest for 10 minutes.
  3. Combine rice vinegar, sugar, and salt in a bowl. Once rice has rested, fluff it and fold in the vinegar mixture.
  4. Mix diced salmon with mayonnaise, sriracha, sesame oil, and green onions until well combined.
  5. Spread the seasoned sushi rice in a baking dish and layer the salmon mixture on top evenly.
  6. Bake in the preheated oven for 25-30 minutes until golden brown.
  7. Let cool slightly, garnish with green onions, nori, and optional tobiko. Serve warm.
