Method
 

Step-by-Step Instructions
  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 5-7 minutes until soft and translucent.
  2. Add minced garlic to the skillet and sauté for an additional minute until fragrant.
  3. Pour in about ½ cup of broth, scraping any browned bits from the skillet. Transfer this mixture into your slow cooker.
  4. Add canned tomatoes, remaining broth, tomato paste, sugar, oregano, and smoked paprika to the slow cooker. Mix everything well.
  5. Cover the slow cooker and cook on LOW for 7-8 hours or on HIGH for 4-5 hours.
  6. About one hour before cooking is complete, stir in fresh basil leaves.
  7. Once the cooking time is up, use an immersion blender to blend the soup to your desired smoothness.
  8. Stir in heavy cream and allow it to cook for an additional 10-15 minutes to heat through.
