Step-by-Step Instructions
  1. Wash the vegetables and chop the eggplant, zucchini, bell peppers, and tomatoes into bite-sized pieces.
  2. Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant and golden.
  3. Incorporate chopped eggplant and bell peppers into the skillet. Sauté for about 5 minutes until eggplant is tender.
