Method
 

Cooking Instructions
  1. In a large bowl, combine the ground chicken with breadcrumbs, egg, grated Parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix gently until just combined.
  2. Using your hands, divide the chicken mixture into eight equal portions, shaping each into a thin patty roughly 4 inches in diameter.
  3. Heat olive oil in a large skillet over medium-high heat until it shimmers. Place the patties into the pan and smash them down with a spatula. Cook for 3-4 minutes on each side.
  4. While the chicken patties are cooking, warm your tortillas on a griddle for about 20-30 seconds per side until pliable.
  5. In a bowl, drizzle Caesar dressing over the chopped romaine lettuce and toss lightly. Fill the warmed tortilla with a patty and dressed romaine, optionally sprinkle with Parmesan shavings.
