  • 1 tablespoon butter Or use olive oil.

Step-by-Step Instructions
  1. Make Aji Verde: Blend fresh cilantro, jalapeños, mayonnaise, Cotija cheese, garlic powder, lime juice, olive oil, salt, and pepper until mostly smooth. Refrigerate to meld flavors.
  2. Prepare Chicken: Slice chicken breasts into thinner cutlets, coat with olive oil, season with cumin, paprika, garlic powder, salt, and pepper. Sear in a skillet until cooked through, then rest.
  3. Cook Cilantro-Lime Rice: Boil chicken broth, add rice and butter, simmer for 15-20 minutes. Fluff with cilantro and lime juice.
