Ingredients
  

Tofu Spread
  • 1 block extra firm tofu press if using less firm varieties
  • 1/2 cup cashews soaked in boiling water for 15 minutes
  • 1 each lemon juice and zest
Marinated Tomatoes
  • 2 cups heirloom tomatoes sliced into thick rounds
  • 2 tablespoons olive oil high-quality extra virgin recommended
  • 1 clove garlic minced
  • 1/4 cup herbs (parsley/basil) feel free to swap with dill or oregano
Sumac Onions
  • 1 each red onion thinly sliced
  • 1 teaspoon sumac can be replaced with more lemon zest and a splash of vinegar
For Assembling
  • 4 slices hearty bread sourdough or sprouted whole wheat recommended
  • 1 each avocado sliced
  • 1 cup lettuce or arugula

Method
 

Preparation Steps
  1. Soak cashews in boiling water for 15 minutes. Drain and blend with extra firm tofu, lemon juice, and zest until smooth to create the tofu spread.
  2. Thinly slice red onions and combine in a bowl with olive oil, vinegar, sumac, and a pinch of salt. Toss with chopped parsley and marinate for 10-15 minutes.
  3. Wash and slice heirloom tomatoes, then combine with olive oil, minced garlic, parsley, basil, and lemon juice. Gently mix in tomatoes and let marinate for 5-10 minutes.
  4. Spread creamy tofu spread on one slice of bread, layer with avocado slices, marinated tomatoes, and sumac onions. Top with lettuce and another slice of bread.
