For the Garlic Sauce
  • 2 cloves Garlic Minced, fresh is best.
  • 1 cup Mayonnaise Can substitute with Greek yogurt.
  • 2 tablespoons Lemon Juice Freshly squeezed for best flavor.
  • a pinch Salt Adjust to taste.

Method
 

Chicken Preparation
  1. In a large mixing bowl, combine yogurt, minced garlic, ground cumin, paprika, salt, pepper, and olive oil. Whisk until smooth.
  2. Add chicken thighs and coat them fully in the marinade. Cover and set aside for at least 20 minutes or refrigerate overnight.
  3. Preheat grill to medium-high heat, around 375°F (190°C). Clean and lightly oil the grates.
  4. Cook marinated chicken on the grill for about 6-8 minutes on each side until cooked through and internal temperature reaches 165°F (75°C).
  5. Let the chicken rest for 5 minutes before slicing it into thin strips.
Garlic Sauce Preparation
  1. In a mixing bowl, combine minced garlic, mayonnaise, lemon juice, and a pinch of salt.
  2. Whisk until smooth and refrigerate for at least 15 minutes before serving.
Serving
  1. Arrange sliced Chicken Shawarma on a platter with fresh vegetables and garlic sauce. Serve with pita bread for wraps.
