Method
 

Cooking Instructions
  1. In a large skillet, heat olive oil over medium heat until shimmering.
  2. Add diced chicken, season with salt and Cajun seasoning, and cook until golden brown and cooked through.
  3. Stir in sliced sausage, and cook until browned and fragrant.
  4. Add chopped onion, minced garlic, and diced bell peppers; sauté until softened.
  5. Stir in rice and additional Cajun seasoning until well-coated.
  6. Pour in vegetable stock, bring to a boil, then reduce heat, cover and simmer until rice is cooked.
  7. Fluff the rice, garnish with parsley, and serve immediately.
