  • 8 slices thick-cut bacon rich, smoky flavor
  • 2 medium onions finely chopped
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup or agave syrup
  • 2 tablespoons balsamic vinegar or red wine vinegar
  • 1 teaspoon ground black pepper freshly cracked

  • 8 slices cheddar cheese or pepper jack

  • 4 medium brioche buns or hamburger buns

  • 1 cup buttermilk for soaking
  • 1 cup flour or gluten-free flour

Method
 

Bacon Jam Preparation
  1. Cook bacon in a skillet over medium heat until crispy, about 8-10 minutes. Remove bacon but retain fat. Sauté onions in fat until caramelized, about 20-25 minutes. Stir in brown sugar, maple syrup, balsamic vinegar, and black pepper; simmer for 5 minutes until thickened.
Onion Strings Preparation
  1. Soak sliced onion in buttermilk for 15 minutes. Mix flour, paprika, garlic powder, salt, and pepper in a bowl. Heat oil in deep-fryer to 350°F. Dredge onion rings in flour and fry until golden brown, about 2-3 minutes.
Burger Cooking
  1. Form ground beef into 8 equal balls. Heat griddle over high heat. Smash each ball onto griddle, season with salt and pepper, and cook for 2-3 minutes. Flip, top with cheese, and cook until cheese melts, about 1-2 minutes.
Bun Toasting
  1. Slice brioche buns in half and heat a skillet over medium heat. Spread butter on cut sides of the buns and toast until golden brown, about 2-3 minutes.
Burger Assembly
  1. Layer bottom half of each bun with a smashed patty, top with bacon jam, crispy onion strings, and place the top half of the bun to serve.
