Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
  2. Rinse and dry the cherry tomatoes thoroughly.
  3. Slice off the top of the garlic head, drizzle with olive oil, and sprinkle with salt.
  4. Season the tomatoes with olive oil, salt, pepper, and red pepper flakes, then toss to coat.
  5. Spread the tomatoes and garlic on the baking sheet and roast for 25-30 minutes.
  6. Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  7. After roasting, squeeze the garlic into a bowl and mash with the tomatoes.
  8. Add remaining olive oil and balsamic vinegar to the mixture, seasoning to taste.
  9. Toss the cooked pasta with the roasted tomato mixture.
