- Blend 2 cups of vanilla yogurt, 1 tbsp of lemon zest, 1 cup of lemon juice, and 1 cup of fresh blueberries in a food processor until smooth.
- Pour the blended mixture into popsicle molds, filling them about three-quarters full.
- Insert popsicle sticks and freeze for at least 2 hours or until completely solid.
- Run molds under warm water for 10-15 seconds to release popsicles.
- Serve immediately, garnished with extra fresh blueberries.
