- In a large bowl, combine 1/4 cup of ranch dressing, 2 minced garlic cloves, and 1/2 cup of grated Parmesan cheese. Add 1 teaspoon of dried parsley, 1/2 teaspoon of black pepper, and 1/4 teaspoon of salt. Stir everything together until the mixture is well blended and creamy.
- Add 1 pound of bite-sized chicken breast pieces to the marinade, making sure each piece is thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes—up to 2 hours for deeper flavor.
- While the chicken marinates, preheat your grill to medium-high heat, aiming for about 375°F to 400°F. If using wooden skewers, soak them in water for at least 30 minutes.
- Carefully thread the marinated pieces onto the soaked skewers, leaving some space between each piece for even cooking.
