Ingredients

For the Marinade
  • 1/4 cup Ranch Dressing provides a creamy, tangy flavor for the chicken
  • 2 cloves Garlic minced; enhances the aromatic depth of the marinade
  • 1/2 cup Parmesan Cheese grated; adds rich flavor; substitute with Pecorino Romano if desired
  • 1 tsp Dried Parsley lends fresh herb notes to the marinade; fresh parsley can be used for a brighter taste
  • 1/2 tsp Black Pepper adds a mild kick; freshly cracked offers more intensity
  • 1/4 tsp Salt enhances all the flavors; adjust according to taste as needed
For the Chicken
  • 1 lb Chicken Breasts boneless, skinless; cut into bite-sized pieces for even cooking
For Grilling
  • Wooden Skewers Soaked in water for 30 minutes to prevent burning on the grill

Equipment

  • Grill
  • Bowl
  • Skewers

Method

Step-by-Step Instructions
  1. In a large bowl, combine 1/4 cup of ranch dressing, 2 minced garlic cloves, and 1/2 cup of grated Parmesan cheese. Add 1 teaspoon of dried parsley, 1/2 teaspoon of black pepper, and 1/4 teaspoon of salt. Stir everything together until the mixture is well blended and creamy.
  2. Add 1 pound of bite-sized chicken breast pieces to the marinade, making sure each piece is thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes—up to 2 hours for deeper flavor.
  3. While the chicken marinates, preheat your grill to medium-high heat, aiming for about 375°F to 400°F. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Carefully thread the marinated pieces onto the soaked skewers, leaving some space between each piece for even cooking.
  5. Place your skewers on the preheated grill. Cook for 10 to 12 minutes, turning occasionally, until the chicken is nicely browned and reaches an internal temperature of 165°F (75°C).
  6. Once fully cooked, remove the skewers from the grill and let them rest for a few minutes. Optionally, sprinkle extra Parmesan and parsley on top before serving.
