  • 2 cups Chicken Broth vegetable broth is an alternative
  • 1 cup Milk/Cream half-and-half or dairy-free option

  • 1 tablespoon Olive Oil high-quality recommended
  • 2 tablespoons Butter for sautéing
  • 2 cloves Garlic minced

  • 2 cups Spinach can also use kale

Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat, then sauté sliced smoked sausage until golden-brown for 4-5 minutes.
  2. Remove sausage, add 2 tablespoons of butter and 2 minced garlic cloves to the skillet, and sauté until fragrant, about 30 seconds.
  3. Add 2 cups of chicken broth and 1 cup of milk to the skillet, stir, and let simmer for 2-3 minutes.
  4. Add 8 ounces of dry rotini pasta to the sauce and cook, covered, for 12-15 minutes until al dente.
  5. Stir in 1 cup of shredded white cheddar cheese and mix until melted.
  6. Add 2 cups of fresh spinach and 1 cup of roasted red peppers, stirring until spinach wilts, about 2 minutes.
  7. Return the sautéed sausage to the skillet, mix, and heat through for 2-3 minutes.
  8. Serve hot, garnished with fresh parsley if desired.
