  • 1 cup Milk/Cream Use half-and-half or a dairy-free alternative.
For Cooking
  • 2 tablespoons Olive Oil Can be replaced with any neutral oil.
  • 1 tablespoon Butter Use a non-dairy spread if desired.
  • 2 cloves Garlic Fresh minced garlic is best, but garlic powder is a handy substitute.

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced sausage and sauté for about 5 minutes until browned, then set aside.
  2. In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Once melted, add 2 minced garlic cloves and sauté for about 1 minute.
  3. Pour in 2 cups of chicken broth and 1 cup of milk, stirring in 1 packet of ranch seasoning. Bring to a simmer for 2-3 minutes.
  4. Add 8 ounces of rotini pasta, cover, and cook for 12-15 minutes, stirring occasionally until pasta is al dente.
  5. Lower the heat and gradually stir in 1 cup of shredded white cheddar cheese until melted.
  6. Fold in 2 cups of fresh spinach and 1 cup of roasted red peppers, adding the browned sausage back to the skillet.
  7. Adjust seasoning with salt and pepper to taste, and serve warm, garnished with fresh parsley if desired.
