- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced sausage and sauté for about 5 minutes until browned, then set aside.
- In the same skillet, reduce the heat to medium and add 1 tablespoon of butter. Once melted, add 2 minced garlic cloves and sauté for about 1 minute.
- Pour in 2 cups of chicken broth and 1 cup of milk, stirring in 1 packet of ranch seasoning. Bring to a simmer for 2-3 minutes.
- Add 8 ounces of rotini pasta, cover, and cook for 12-15 minutes, stirring occasionally until pasta is al dente.
- Lower the heat and gradually stir in 1 cup of shredded white cheddar cheese until melted.
- Fold in 2 cups of fresh spinach and 1 cup of roasted red peppers, adding the browned sausage back to the skillet.
- Adjust seasoning with salt and pepper to taste, and serve warm, garnished with fresh parsley if desired.
