Step‑by‑Step Instructions for Neapolitan Cookies
  1. Preheat your oven to 350°F (180°C) and line your baking sheets with parchment paper.
  2. In a stand mixer, cream the salted butter with brown sugar and granulated sugar for 2-3 minutes until fluffy.
  3. Add one egg and one yolk along with the vanilla extract, mix until combined.
  4. Gradually add flour, baking soda, and salt, mix just until combined.
  5. Divide the dough into three portions and keep one in the mixer.
  6. Mix in vanilla pudding for one portion, chocolate pudding for the second, and strawberry pudding with food coloring for the last.
  7. Scoop portions of each flavor together, roll into balls, and coat with granulated sugar.
  8. Bake for 8-10 minutes until puffy but glossy.
  9. Cool on the baking sheet for 5-10 minutes then transfer to a rack.
