For the Grains
  • 1 cup Quinoa or Brown Rice Cooked according to package instructions
For the Tahini Sauce
  • 1/3 cup Tahini
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1/4 cup Water Adjust for desired consistency
  • 1 teaspoon Salt To taste
For the Vegetables
  • 1 cup Cucumber Diced or sliced
  • 1 cup Tomatoes Diced
  • 1/2 cup Red Onion Thinly sliced
  • 2 cups Mixed Greens
For Garnish
  • 1 cup Additional Veggies (Bell Peppers, Carrots) Optional

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the cauliflower into uniform florets. In a large mixing bowl, combine the florets with olive oil and spices, tossing until fully coated.
  3. Spread the seasoned cauliflower on a baking sheet and roast for about 25 minutes, flipping halfway through until golden brown.
  4. While the cauliflower is roasting, prepare your grains according to the package instructions.
  5. In a small bowl, whisk together tahini, lemon juice, and water until smooth. Season with salt.
  6. To assemble the bowls, start with a layer of grains, top with roasted cauliflower, and add fresh vegetables. Drizzle with tahini sauce.
  7. Serve warm or at room temperature, and enjoy!
