Step-by-Step Instructions for Breakfast Grilled Cheese
  1. Begin by heating a non-stick skillet over medium heat. Add the ground breakfast sausage, cooking for about 5–7 minutes, breaking it apart with a spatula as it browns. Once done, remove the sausage from the skillet and set it aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Whisk your beaten eggs in a bowl and pour them into the melted butter. Stir gently for about 3–5 minutes until the eggs are fluffy and fully cooked.
  3. Once the scrambled eggs are done, combine them with the cooked sausage in a bowl, mixing thoroughly to ensure even distribution.
  4. Take your slices of sourdough bread and butter one side of each slice generously. Properly buttered bread will give your sandwich a crispy, golden exterior.
  5. In the same skillet, place one slice of bread butter-side down. Layer it with a slice of cheese, followed by half a cup of the sausage-egg mixture, and another slice of cheese on top. Finish with another slice of bread, butter-side up.
