- Begin by heating a non-stick skillet over medium heat. Add the ground breakfast sausage, cooking for about 5–7 minutes, breaking it apart with a spatula as it browns. Once done, remove the sausage from the skillet and set it aside.
- In the same skillet, melt 2 tablespoons of butter over medium-high heat. Whisk your beaten eggs in a bowl and pour them into the melted butter. Stir gently for about 3–5 minutes until the eggs are fluffy and fully cooked.
- Once the scrambled eggs are done, combine them with the cooked sausage in a bowl, mixing thoroughly to ensure even distribution.
- Take your slices of sourdough bread and butter one side of each slice generously. Properly buttered bread will give your sandwich a crispy, golden exterior.
- In the same skillet, place one slice of bread butter-side down. Layer it with a slice of cheese, followed by half a cup of the sausage-egg mixture, and another slice of cheese on top. Finish with another slice of bread, butter-side up.
