Ingredients
  

For the Dressing
  • ¼ cup freshly squeezed lemon juice
  • 2 cloves minced garlic
  • 1 teaspoon kosher salt adjust to taste
  • to taste freshly ground black pepper
  • pinch Urfa Biber optional
  • ½ cup extra virgin olive oil high-quality
For the Salad
  • 1 cup black or green lentils avoid red lentils
  • 1 bay leaf for cooking
  • 1 large English cucumber chopped
  • 1 medium red bell pepper diced
  • 1 medium orange bell pepper diced
  • 2 green onions finely chopped
  • handful fresh parsley chopped
  • handful fresh mint chopped

Method
 

Dressing Preparation
  1. In a mixing bowl, combine the lemon juice, minced garlic, kosher salt, and black pepper. Add Urfa Biber if using. Gradually whisk in olive oil until well blended.
Lentil Cooking
  1. Rinse lentils under cold water, then combine with bay leaf and cover with water in a medium pot. Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes until tender but firm. Drain and remove bay leaf.
Combining Ingredients
  1. While warm, transfer lentils to the bowl with dressing. Gently stir to coat lentils in the dressing.
Adding Vegetables and Herbs
  1. Add cucumber, red and orange bell peppers, green onions, parsley, and mint to lentils. Gently fold together.
Final Adjustments
  1. Taste and adjust seasoning before serving. Serve immediately or chill for a couple of hours. Add more dressing just before serving if prepared ahead.
