Preparation Steps
- Preheat your oven to 375°F (190°C).
- Grease a 9x13-inch baking dish with olive oil.
- In a large bowl, mix chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and seasonings; toss to coat.
- Spread the mixture evenly into the baking dish, pressing down gently.
- Sprinkle mozzarella and Parmesan cheese over the top.
- Cover with aluminum foil and bake for 20 minutes.
- Remove foil and bake for another 10-15 minutes until cheese is golden and chicken reaches 165°F (75°C).
- Let it rest for a few minutes, then garnish with fresh parsley before serving.
