Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish with olive oil.
  3. In a large bowl, mix chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and seasonings; toss to coat.
  4. Spread the mixture evenly into the baking dish, pressing down gently.
  5. Sprinkle mozzarella and Parmesan cheese over the top.
  6. Cover with aluminum foil and bake for 20 minutes.
  7. Remove foil and bake for another 10-15 minutes until cheese is golden and chicken reaches 165°F (75°C).
  8. Let it rest for a few minutes, then garnish with fresh parsley before serving.
