Ingredients
  

For the Patties
  • 1 lb Ground Chicken Can substitute with ground turkey.
  • 1 medium Onion Finely diced shallots bring great flavor.
  • 2 cloves Garlic Fresh minced garlic is ideal.
  • 1 cup Breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • 1/2 cup Greek Yogurt Can be replaced with dairy-free yogurt.
  • 1 cup Spinach Fresh or frozen, chopped.
  • 2 tbsp Dill Fresh dill is preferred.
  • 1 tbsp Lemon Juice Fresh juice is best.
  • 1 tsp Oregano
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 1/2 tsp Salt Adjust to taste.
  • 1/4 tsp Pepper Adjust to taste.

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sauté diced onion for about 5 minutes until translucent, then add minced garlic and cook for another 30 seconds.
  2. In a large mixing bowl, combine sautéed onion and garlic with spinach, ground chicken, breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper. Mix thoroughly.
  3. Shape the mixture into eight uniform patties, about ½ inch thick. Place on a clean plate.
  4. In the same skillet, add the remaining 1 tablespoon of olive oil. Cook patties for 5-6 minutes on one side until golden brown, then flip and cook for another 5-6 minutes.
  5. Transfer cooked patties to a plate lined with paper towels to drain excess oil. Serve warm.
