Ingredients
  

For the Tofu Spread
  • 14 ounces extra firm tofu Press for 15 minutes if firm or medium tofu is used
  • 1 cup raw cashews Soak in boiling water for 15 minutes
  • 1 juice lemon Use fresh juice and zest
For the Vegetables
  • 2 count heirloom or hothouse tomatoes Slice about half an inch thick
  • 0.5 count red onion Slice and marinate
  • to taste fresh herbs (parsley, basil) Use your favorite herbs
For the Marinade
  • 1 teaspoon sumac Tangy spice for marinating onions
  • 2 tablespoons olive oil Use quality extra virgin olive oil
For Assembly
  • 2 slices hearty bread Sourdough or sprouted whole wheat
  • to taste lettuce Use your favorite variety

Method
 

Preparation
  1. Soak raw cashews in boiling water for 15 minutes. Drain and press tofu for optimal creaminess. Blend cashews with tofu, lemon juice, and zest until smooth. Refrigerate for at least 30 minutes.
  2. Slice half a red onion and marinate in a bowl with olive oil, vinegar, sumac, and parsley for 10-15 minutes.
  3. Slice two heirloom tomatoes, drizzle with olive oil and lemon juice, season with salt, pepper, and herbs. Marinate for 5-10 minutes.
  4. Spread tofu mixture on one slice of bread, layer with marinated tomatoes, onions, and lettuce. Top with another slice spread with remaining tofu mixture.
  5. Cut the sandwich in half and serve fresh to enjoy the vibrant flavors.
