Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) to ensure perfect roasting of the vegetables.
  2. Arrange the Roma or Beefsteak tomatoes, habanero peppers, and roughly chopped onion on a baking sheet. Drizzle with avocado or olive oil.
  3. Roast for about 25 minutes or until softened and charred; broil for an additional 2 minutes for extra smokiness.
  4. Let the roasted vegetables cool slightly, then transfer to a food processor along with mangos, cilantro, lime juice, salt, and garlic powder. Blend until smooth with some texture.
  5. Transfer the salsa to a bowl, cover, and refrigerate for a few hours to allow the flavors to meld.
