Preparation
- Preheat your oven to 350°F (175°C). Grease the baking dish with olive oil or butter.
- In a large mixing bowl, combine the ground beef, finely chopped onion, breadcrumbs, egg, and milk. Season with salt and pepper and mix until just combined.
- Press the meatloaf mixture into the greased baking dish and bake for 20 minutes until edges brown.
- While the meatloaf is baking, bring a large pot of salted water to boil, add macaroni, and cook until al dente, about 6-8 minutes. Drain.
- In a medium saucepan, melt butter over medium heat. Stir in flour to create a roux. Gradually whisk in milk until sauce thickens. Mix in shredded cheese, paprika, and dry mustard.
- Add the drained macaroni to the cheese sauce, stirring well. Pour this mixture over the baked meatloaf layer.
- Sprinkle additional cheese on top and bake for another 25 minutes until bubbly and golden brown.
