Step-by-Step Instructions
  1. In a mixing bowl, combine 2 cups of plain Greek yogurt with ¼ cup of honey. Stir vigorously until the mixture is smooth and creamy, ensuring no lumps remain.
  2. Squeeze in the fresh juice of one lemon, about ¼ cup, along with the zest of that same lemon. Mix until the yogurt is evenly brightened with these tangy flavors.
  3. Gently fold in 1 cup of lightly crushed fresh raspberries to the yogurt mixture using a spatula.
  4. Carefully pour the mixture into ice cube trays or silicone molds, filling each section to the top. Tap the mold on the counter to eliminate air bubbles.
  5. Transfer the filled molds into the freezer and allow them to set for at least 3 hours or until completely frozen.
  6. Once frozen, remove the Lemon Raspberry Yogurt Bites from the molds. Let them sit for a minute at room temperature for easier removal if needed.
