- In a mixing bowl, combine 2 cups of plain Greek yogurt with ¼ cup of honey. Stir vigorously until the mixture is smooth and creamy, ensuring no lumps remain.
- Squeeze in the fresh juice of one lemon, about ¼ cup, along with the zest of that same lemon. Mix until the yogurt is evenly brightened with these tangy flavors.
- Gently fold in 1 cup of lightly crushed fresh raspberries to the yogurt mixture using a spatula.
- Carefully pour the mixture into ice cube trays or silicone molds, filling each section to the top. Tap the mold on the counter to eliminate air bubbles.
- Transfer the filled molds into the freezer and allow them to set for at least 3 hours or until completely frozen.
- Once frozen, remove the Lemon Raspberry Yogurt Bites from the molds. Let them sit for a minute at room temperature for easier removal if needed.
