Oatmeal Crust and Topping
  • 1 cup Unsalted Butter softened to room temperature
  • 1 cup Brown Sugar or coconut sugar for deeper flavor
  • 1 teaspoon Vanilla Extract optional
  • 1 cup All-Purpose Flour or gluten-free flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 cups Old-Fashioned Oats or quick oats
Lemon Filling
  • 1 can Sweetened Condensed Milk full-fat for best texture
  • 1/3 cup Lemon Juice freshly squeezed from about 2 lemons
  • 1 tablespoon Lemon Zest

Method
 

Preparation
  1. Preheat your oven to 350°F (177°C) and line an 8-inch square baking pan with parchment paper, leaving overhang.
  2. In a mixing bowl, combine softened unsalted butter and brown sugar until fluffy. Add vanilla extract and mix again.
  3. Gradually add all-purpose flour, baking powder, salt, and oats, mixing until the mixture resembles a crumbly texture.
  4. Press more than half of the crumble mixture into the bottom of the prepared baking pan and bake for about 12 minutes.
  5. In another mixing bowl, whisk together sweetened condensed milk, lemon juice, and lemon zest until smooth.
  6. Pour the lemon filling over the hot crust and sprinkle the remaining crumble mixture on top.
  7. Return to the oven and bake for another 22-25 minutes until golden edges form.
  8. Allow the bars to cool completely in the pan on a wire rack before slicing into squares.
