Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare your muffin tins.
  2. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, and a pinch of salt.
  3. In another bowl, whisk together the wet ingredients: Greek yogurt, eggs, vegetable oil, vanilla extract, lemon juice, and lemon zest.
  4. Carefully fold the wet mixture into your dry ingredients, being cautious not to over-mix. Once incorporated, gently stir in the blueberries.
  5. Prepare the streusel topping by combining flour, sugar, diced butter, and cinnamon until crumbly.
  6. Spoon the muffin batter evenly into your muffin tins and sprinkle the streusel topping over each muffin.
  7. Bake for 15-18 minutes, or until a toothpick comes out clean from the center.
  8. Remove from the oven, cool in the pans for 5 minutes, and then transfer to a wire rack to cool completely.
