Method
 

Bake Sweet Potatoes
  1. Preheat your oven to 425°F. Wash and pierce the sweet potatoes with a fork. Bake them for about 60 minutes until tender. Lower temperature to 350°F while cooling.
Prepare Filling
  1. Scoop out the flesh of cooled sweet potatoes into a mixing bowl and mash until smooth. Combine with melted butter. In a separate bowl, whisk together sugar, flour, cinnamon, nutmeg, clove, and salt, then blend into the sweet potato mixture with milk, cream, and vanilla.
Incorporate Eggs
  1. In a clean bowl, beat the eggs until frothy. Gradually stir into the sweet potato filling until smooth.
Bake Pie
  1. Pour the sweet potato filling into a par-baked pie crust and smooth the top. Bake at 350°F for 45 to 50 minutes until edges are set and the center is slightly jiggly.
Cool and Chill
  1. Remove from oven and cool on a wire rack for 1 to 2 hours. Chill in the refrigerator for at least 3 hours or overnight.
