  • 8 ounces Cremini Mushrooms thinly sliced
  • 1 teaspoon Dried Thyme fresh thyme can be used at three times the quantity
  • 1 teaspoon Dried Oregano fresh oregano makes a great swap
  • to taste Kosher Salt adjust based on preference
  • to taste Black Pepper adjust based on preference
  • 8 ounces Wisconsin Fresh Mozzarella Cheese any quality fresh mozzarella is acceptable
  • 1 cup Wisconsin Ricotta Cheese can substitute with cottage cheese or goat cheese

Step-by-Step Instructions
  1. Preheat your oven to 450°F (230°C) and prepare a baking sheet or pizza pan by lightly coating it with olive oil.
  2. In a skillet over medium heat, melt the unsalted butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add cremini mushrooms, dried thyme, and dried oregano to the skillet. Sauté for 5-6 minutes, seasoning with kosher salt and black pepper.
  4. On a surface dusted with yellow cornmeal, roll out the pizza dough to a 12-inch round, about ¼ inch thick.
  5. Transfer the rolled-out dough to your prepared pan. Spread fresh mozzarella evenly, followed by dollops of ricotta and the sautéed mushrooms.
  6. Bake the pizza in the preheated oven for 15-20 minutes, keeping an eye on it until the crust is golden brown.
  7. Remove the pizza and let it cool slightly. Slice into wedges and serve immediately.
