For the Spices
  • 1 teaspoon Garam Masala Adjust for spice tolerance
  • 1/2 teaspoon Turmeric
  • 1 teaspoon Hot Curry Powder Optional
  • 1 teaspoon Chili Powder Omit for milder flavor
  • 1/2 teaspoon Black Pepper Swap for white pepper if desired
  • 1 medium Jalapeno Optional for extra heat
  • 1 tablespoon Fresh Lemon Juice Or lime juice
For the Wrapping and Sealing
  • 1 pack Spring Roll Pastry Goya discs are great
  • 2 tablespoons All-Purpose Flour Gluten-free flour as alternative

Method
 

Step-by-Step Instructions
  1. Step 1: Boil the Potatoes. Peel and cube potatoes, boil for 15-20 minutes until tender, then mash.
  2. Step 2: Sauté the Aromatics. Heat olive oil, and sauté onion, garlic, ginger, and jalapeno for 5-7 minutes.
  3. Step 3: Prepare the Filling. Mix sautéed aromatics with mashed potatoes, cilantro, lemon juice, and spices.
  4. Step 4: Make the Sealing Paste. Combine flour and water to create a sticky paste.
  5. Step 5: Assemble the Samosas. Shape pastry into cones, fill with mixture, and seal edges.
  6. Step 6: Fry or Bake the Samosas. Fry in hot oil or bake in the oven until golden.
  7. Step 7: Cool and Serve. Allow to cool on a wire rack before serving with dips.
