- Start by thawing a sheet of puff pastry at room temperature for about 30 minutes. Once pliable, roll it out on a lightly floured surface until it's thin but not transparent. Use a sharp knife to cut the pastry into squares large enough to line six ramekins, giving you about an inch of overhang.
- Grease the insides of six ramekins or muffin cups with cooking spray or a thin layer of butter to prevent sticking. Place the ramekins on a baking sheet for easier handling later.
- Gently press a pastry square into each ramekin, allowing the edges to hang over the sides. Make sure to line the bottom and sides thoroughly.
- In a mixing bowl, whisk together 6 fresh eggs until smooth and well combined. Gradually add in ½ cup of half-and-half, and then fold in your preferred cheeses until the mixture becomes frothy.
- Distribute your choice of cooked vegetables and meats evenly into the lined ramekins. Pour the egg mixture over the fillings, filling each ramekin about three-quarters full.
- Carefully fold the overhanging pastry edges over the egg mixture to enclose the filling. Brush the tops of the pastry with an egg wash made from a beaten egg and a splash of water.
- Preheat your oven to 375°F (190°C). Place the filled ramekins on the baking sheet in the preheated oven and bake for 30-35 minutes.
- Once golden, remove the ramekins from the oven and allow them to cool for about 5 minutes before serving.
