  1. Heat a large skillet over medium-low heat and add the vegetable oil. Once the oil shimmers, add the thinly sliced garlic. Stir frequently for 4-5 minutes until the garlic is fragrant and golden brown.
  2. Introduce the cooked cold long-grain white rice to the pan, breaking up any clumps with a spatula. Mix the rice with the garlic for around 2-3 minutes, until heated through and slightly crispy.
  3. Turn off the heat and sprinkle in the rock salt, stirring gently. Then, add the chopped scallions and mix until evenly distributed.
