Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat and add olive oil. Allow the oil to warm for about 1 minute until it shimmers.
  2. Season chicken with smoked paprika, garlic powder, onion powder, salt, and pepper. Add the seasoned chicken to the hot skillet and cook for about 10 minutes until golden brown.
  3. Mix honey and hot sauce in a small bowl. Pour over the cooked chicken and toss to coat. Let it simmer for 2-3 minutes.
  4. Prepare the jalapeño cream sauce by combining sour cream, chopped jalapeños, and lime juice in a bowl. Mix well and chill.
  5. Assemble quesadillas by layering a tortilla with cheddar cheese, hot honey chicken, more cheddar, and another tortilla on top.
  6. Grill the assembled quesadillas in the skillet with butter for 2-3 minutes on each side until crispy.
  7. Remove from skillet, slice into wedges, serve with jalapeño cream sauce, and garnish with cilantro.
