- Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- Mash 3 large overripe bananas in a mixing bowl and set aside.
- In a large bowl, whisk together 1/2 cup melted unsalted butter, 1/2 cup granulated sugar, and 1/2 cup light brown sugar until smooth. Add 2 room-temperature eggs one at a time, and 1 teaspoon vanilla extract, followed by the mashed bananas.
