Method
 

Preparation Steps
  1. In a large bowl, combine 2.2 lb of ground beef or lamb with a grated onion, 3 grated garlic cloves, ¼ cup plain yogurt, and 2 tablespoons tomato paste. Season with salt, pepper, 2 teaspoons cumin, 1 tablespoon paprika, and 2 teaspoons oregano. Drizzle in 2 tablespoons of olive oil and mix until sticky.
  2. Divide the meat mixture into 5 equal parts, placing each between sheets of parchment paper. Roll each into a ½ inch thick rectangle.
  3. Lift the edge of the parchment and roll the meat rectangle tightly into a log shape, securing each log with the parchment.
  4. Preheat oven to 200°C (400°F). Place wrapped meat logs on a baking tray and bake for 20-25 minutes until cooked and browned.
  5. After baking, let the meat logs rest for 5 minutes. Unwrap and slice them thinly for serving.
  6. Warm pita or tortillas, arrange sliced meat on top and add toppings like lettuce, red onion, and pickles. Drizzle with sauces, and serve.
