- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
- In a separate bowl, beat the eggs and then stir in the milk, melted butter, and fresh blueberries.
- Gradually pour the wet mixture into the dry ingredients, mixing gently until just combined; be careful not to overmix.
- In a deep skillet or heavy pot, heat about two inches of vegetable oil over medium heat until it reaches 365°F - 375°F.
- Once the oil is hot, carefully drop spoonfuls of the batter into the hot oil using a cookie scoop or tablespoon.
- Fry the donuts for about 2-3 minutes on each side, or until they turn a beautiful golden brown.
- Remove the donuts from the oil and place them on paper towels to drain excess oil.
- Let the fried Blueberry Cake Donuts cool on the paper towels for a couple of minutes.
- Serve them as they are or dusted with powdered sugar for a sweet finish.
